The Best Cake Batter Cookies


Serves: 20 - 24 cookies

INGREDIENTS:

  • 1 box Funfetti Cake Mix (15.25 oz.) or any cake flavor mix of the same size

  • 8 tablespoons butter, melted

  • 1 egg

  • 1 tablespoon vanilla

  • 4 ounces cream cheese, softened

  • 1 cup m&ms (or any other candy mix in you prefer - I also do 1.5 cups crushed oreos for cookies and cream cake batter cookies)

DIRECTIONS:

  1. Beat the cake mix, butter, egg, and vanilla until a soft dough forms.

  2. Cut the cream cheese into small chunks. Add the cream cheese in and beat again until just mixed in.

  3. Gently stir in the candies / cookies / mix-ins.

  4. Place the dough into saran wrap or parchment paper and place into the refrigerator for at least 30 minutes to chill.

  5. Preheat the oven to 350 degrees.

  6. Using an ice cream scoop, roll the dough into 20-24 balls. Bake at 350 degrees for 12 minutes. The cookies may look under-baked, but remove from the oven anyways. DO NOT OVER-BAKE.

  7. Remove the from the oven and let the cookies sit on the baking sheet for at least 4 minutes. Gently move to a cooling rack to cool completely.

  8. Store in a sealed container on the counter - will last 5 -7 days.
