Spiced Shortbread Cookies


Serves: 16 cookies

INGREDIENTS:

  • 1.25 cups unsalted butter, softened

  • ½ cup sugar

  • 2 cups all purpose flour

  • 5 tablespoons ground ginger

  • 1 tablespoon Chinese 5-spice

  • 1 tablespoon nutmeg

  • 1 tablespoon cinnamon

  • Powdered Sugar (optional)

DIRECTIONS:

  1. Preheat the oven to 325 degrees. Cream butter and sugar until light and fluffy.

  2. Mix the flour and all the spices together and then slowly add the mixture to the butter and sugar until incorporated.

  3. Place dough between parchment paper and roll out to ¼ inch thickness. Cut out using a cookie cutter circle - i use the medium size to make 16 cookies.

  4. Bake until light brown, 30 minutes. Remove from the oven and cool completely on a wire rack. If using, dust with powdered sugar.
