INGREDIENTS:
2 cups washed Quinoa
1 package Turkey Bacon
½ cup frozen peas
½ cup frozen corn
½ cup shredded carrots
5 eggs
2 teaspoons minced Garlic
1 shallot
1 bunch green onion
¼ cup Soy Sauce
1 tablespoon fish sauce
1 tablespoon white vinegar
2 tablespoons olive oil
Garlic Salt
Pepper
DIRECTIONS:
Cook the quinoa according to package directions. Remove from heat and place in the refrigerator.
Cut the bacon into small pieces, and heat the olive oil in a dutch oven or pot. Cook the bacon until crisp, remove from the pot leaving behind the oil. Add in the sliced shallot and cook until translucent, about 3 minutes. Add in the garlic, peas, corn and carrots and salt and pepper to taste. Cook for about 5 more minutes.
While the veggies cook, in a separate pan, scramble the eggs on low heat for about 5 minutes. Remove from heat.
Add back into the pot the bacon, then the quinoa, then the soy sauce, fish sauce, white vinegar and turn off the heat. Stir in the eggs. Garnish with green onion. Serve immediately.
