Chipotle Roasted Veggies and Goat Cheese


Serves: 5-6

INGREDIENTS:

  • 1 pound brussel sprouts, halved

  • 12 ounces multi-color baby carrots, halved

  • 1 pound golden beets, diced

  • 5 ounces crumbled goat cheese

  • 3 tablespoons chipotle powder

  • 1 tablespoon cayenne pepper

  • Avocado oil cooking spray (or any other cooking spray)

  • Salt and Pepper to taste

DIRECTIONS:

  1. Preheat the oven to 400 degrees.

  2. Prepare two half sheet baking sheets with aluminum foil. Place the veggies on both sheets, making sure there is one clear layer.

  3. Spray to evenly coat the veggies with the chipotle powder, cayenne pepper and salt and pepper. Using a spatula stir the veggies to ensure seasoning and oil spray is evenly distributed.

  4. Place in the preheated oven and roast for 30 minutes. Remove from the oven and let cool.

  5. Once cooled, place in a glass serving bowl and stir in the goat cheese. Serve.
